Peanut Butter Cookies

Serves 36 people


  • 1 1/2 C flour
  • 1 1/2 t baking powder
  • 1/2 t salt
  • 2/3 shortening
  • 1/2 C creamy peanut butter
  • 1 C packed brown sugar
  • 1 egg
  • 1/2 t vanilla


  1. Oven 375 degrees.

  2. Sift flour with baking powder and salt. Blend shortening with peanut butter in mixing bowl. Gradually add brown sugar, creaming until light and flurry. Add egg and vanilla. Beat well. Blend in sifted dry ingredients gradually; mix thoroughly. Shape dough into balls, using a rounded teaspoonful for each. Place on ungreased cookie sheets. Flatten balls with fork tines, crisscross fashion. Bake at 375 degrees for 10 to 12 minutes, until golden.
