cranberry steamed pudding

Ingredients

  • 1 egg beaten
  • 1/4 C sugar
  • pinch of salt
  • 1/2 C molasses with rounded t baking soda
  • 1/3 C hot water
  • 1 1/2 C flour
  • 1 1/2 C cranberries cut in half
  • Sauce:
  • 1 C sugar
  • 1 T flour
  • 1/2 C butter
  • 1 C cream
  • vanilla or rum for flavor
  • Large batch:
  • 4 lb sugar
  • 2 qt cream
  • 2 lb butter
  • 1/2 C flour

Directions

  1. beat egg first

  2. add rest of ingredients

  3. put in 2 16oz cans (about 3/4 full)

  4. steam 1 1/2 hours

  5. sauce: melt butter, add flour, stir, add sugar and then cream—do not boil—remove from heat and add flavor
