Baked Sweet Potatoes with Sage Butter

Ingredients

  • 2 small sweet potatoes, halved lengthwise
  • 1 tbsp. vegetable oil
  • 1 1/2 tsp kosher salt, divided
  • 1/4 tsp black pepper
  • 1/2 cup unsalted butter, softened
  • 1/4 tsp ground cardamom
  • 1 tbsp. chopped fresh sage

Directions

  1. Preheat oven to 400.

  2. Rub potatoes with oil, and sprinkle all over with 1/2 tsp salt and pepper. Place cut side down on a rimmed baking sheet.

  3. Bake until tender, 30-35 minutes.

  4. Meanwhile, in a small bowl, stir together butter, cardamom, and remaining 1 tsp salt until smooth and creamy; stir in sage. Fluff potatoes and top with herb butter.
