Fruity Curried Chicken

Ingredients

  • 1 chicken, cut into about 8 pieces
  • Flour
  • salt and pepper
  • Vegetable oil
  • 2 medium onions, chopped
  • 2 tbsp mild curry powder
  • 6 tbsp tomato paste
  • 3 cups chicken stock
  • 1 medium cooking apple (granny smith or golden delicious), peeled and thinly sliced
  • 1 large carrot, peeled and thinley sliced
  • 2 lemon slices
  • 1/2 cup raisins
  • bay leaf
  • 1 tsp brown sugar

Directions

  1. Preheat the oven to 350

  2. Trim any fat from the chicken and remove some of the skin

  3. coat the chicken with seasoned flour

  4. fry in veg oil until lightly golden, then drain on paper towels and place in casserole dish

  5. Heat 2 tbsp veg oil in a frying pan and saute the onions for about 10 minutes until softened but not colored

  6. Stir in the curry powder and tomato paste and continue to cook for 2-3 minutes

  7. Stir in 2 tbsp of flour and 2 cups of sock

  8. Add the sliced apple, carrot, lemon slices, raisins, bay leaf, brown sugar and the remaining stock

  9. season with salt and pepper

  10. Pour the sauce over the chicken in the casserole, coer, and bake in the oven for 1 hour

  11. Remove the lemon slices and bay leaf, take the chicken off the bone and cut into pieces

  12. Serve with rice
