Charred Green Beans with Sage Vinaigrette

Ingredients

  • 3 tbsp. olive oil, divided
  • 1 lb. green beans, trimmed
  • 1/4 cup golden raisins
  • 1/4 cup chopped hazelnuts
  • 2 garlic cloves, minced
  • 1/2 tsp kosher salt, divided
  • 1/4 cup water
  • 1 tbsp. red wine vinegar
  • 1 1/2 tsp chopped fresh sage
  • 1/2 tsp Dijon
  • 1/4 tsp black pepper

Directions

  1. In a cast-iron skillet, heat 1 tbsp. oil over medium-high heat. Add green beans in an even layer; cook, without stirring, for 3 minutes. Reduce heat to medium. Stir in raisins, hazelnuts, garlic and 1/4 tsp salt; cook, without stirring, for 3 minutes. Add 1/4 cup water, and stir; cover and cook until tender, 3-4 minutes.

  2. In a small bowl, whisk together vinegar, sage, mustard, pepper, remaining 2 tbsp. oil, and remaining 1/4 tsp salt until smooth. Drizzle vinaigrette over green beans.
