Little Roasted Tomatoes

Crudite dippers

Ingredients

  • 2 cups mixed red cherry and yellow pear tomatoes
  • 1 tbsp olive oil
  • Salt and pepper
  • 1 garlic clove, thinly sliced
  • Few sprigs fresh thyme

Directions

  1. On foil-lined rimmed baking sheet, toss tomatoes with olive oil. Arrange in a single layer. Season with salt and pepper and top with garlic and thyme. Roast at 375 until soft and beginning to wrinkle, about 40 minutes. Let cool.
