Potato Soup

Serves 6 people

Ingredients

  • 2 c peeled, cubed potatoes (4 med. )
  • 1 med onion, chopped
  • 2 C water
  • 1C milk
  • 1/4 C flour
  • 1 t salt
  • 2 t chicken bouillon
  • 1 t dried parsley flakes
  • 1/8 t pepper
  • 2 t butter

Directions

  1. Microwave potato, onion and water in covered 2 – quart casserole 16 t0 18 minutes or until potato is just tender. Combine milk and flour; stir into vegetable mixture along with remaining ingredients.

  2. Microwave, covered, 8 – 10 minutes or until soup boils. if desired thin with milk.

  3. This is a good base for several cream style soups: broccoli-cheddar, seafood chowders
