Mexican Casserole

Ingredients

  • 4 to 5 flour tortillas
  • 1 lb. ground beef
  • 1/2 C chopped pepper
  • 1/2 C onion
  • 1 envelope taco seasoning (1 1/4 oz.)
  • 1 8 oz. can tomato sauce
  • 1 6 oz. can tomato paste
  • 1/2 C pitted ripe olives (optional)
  • 1/4 C water
  • 1/2 t chili pepper
  • 1 C sour cream
  • 2 eggs
  • 1/4 t pepper
  • 2 c broken corn chips
  • 2 C shredded Monterey Jack Cheese or Cheddar

Directions

  1. Place frozen tortillas between paper towels. Microwave at High 30 to 60 seconds. Separate. Crumble ground beef into 2 quart casserole.

  2. Add green pepper and onions. Microwave at High 3 to 5 min or until meat loses its pink color and vegetables are tender-crisp. Stir and drain.

  3. Mix in taco seasoning, tomato sauce and paste (I usually just add a 16 oz. can of sauce and skip the paste and water.) olives, water and chili powder. Microwave at 50 % power 10 to 15 minutes or until thickened.

  4. Blend sour cream, eggs and pepper together in a small bowl. Place 2 tortillas on bottom of 12X8 in dish.

  5. Top with half the meat mixture followed by half the sour cream mixture. Repeat layers with remaining ingredients.

  6. Sprinkle corn chips and cheese,. Microwave at 50% power until cheese melts. Let stand 5 minutes.

  7. I have made this for work and cooked it in an electric fry pan. Turned out great.
