Cast Iron Steaks with Herb Butter

Ingredients

  • 2 lbs. New York strip steaks about 1/2 in. thick.
  • Salt
  • Pepper
  • 4 Tbsp. Butter
  • 2 Tbsp. Shallot,
  • 1 Tbsp. Parsley, minced
  • 1 Tbsp. chives, minced
  • 1 clove garlic
  • 2 Tbsp. Vegetable Oil.

Directions

  1. Sprinkle salt on both sides of each steak and set aside.

  2. Heat cast iron skillet in oven at 500 degrees until hot, usually about 30 minutes.

  3. Mix shallot, parsley, chives, garlic, salt, pepper, and butter to make your butter spread. Set aside.

  4. Pat steaks dry and season with some pepper.

  5. Remove pan from oven and place on med high heat on stovetop. Add vegetable oil.

  6. When oil begins to smoke add meat to pan. Turn every 2 minutes on each side. Then turn heat down to med low and cook again for 2 minutes each side. Cook a total about 10 minutes or so.

  7. Remove steaks from pan and top with butter spread. Cover lightly with tin foil and let rest for 5-10 minutes.
