Beef and Green Pepper Skillet Casserole

Ingredients

  • Cooking oil
  • 1 large onion, peeled and chopped
  • 1 clove garlic, peeled and minced
  • 1 1/2 lb. lean ground beef OR ground chicken
  • 1 tsp. salt, or to taste
  • Ground black pepper to taste
  • 1 ( 8oz..) can tomato sauce OR stewed tomatoes
  • 1 cup water
  • 1/2 cup uncooked rice
  • 2 large green bell peppers, seeded and each cut in 4 to 6 slices

Directions

  1. In a large skillet over medium heat, heat enough cooking oil to coat the skillet. Add onion and garlic and cook until onion is limp.

  2. Push onion and garlic aside and add ground beef or chicken. Add salt and black pepper and cook meat until no longer pink.

  3. Dti in tomato sauce or stewed tomatoes, water and rice. Add bell peppers, cover and cook on low until rice is done. Add water during cooking if mixture becomes too dry.
