Beef Kabobs with Cucumber Yogurt Sauce

Ingredients

  • 2 lb. lean boneless beef, sirloin or top round, in 1-inch cubes
  • 8 small onions, quartered
  • 1/2 cup olive oil
  • 1/3 cup lemon juice
  • 2 tsp. curry powder
  • 1 tsp. salt
  • 1 tsp. paprika
  • 1/4 tsp. ground ginger
  • 1/4 tsp. pepper
  • 1 clove garlic, crushed
  • 1 bay leaf
  • 2 zucchini, sliced
  • 1 large cucumber
  • 1 container (8 oz.) plain yogurt
  • 1/4 tsp. ground cumin
  • 16 small pita breads
  • 2 tomatoes, seeded and chopped

Directions

  1. Place beef and onion in bowl. Combine oil, lemon juice, curry, salt, paprika, ginger, pepper, garlic and bay leaf; pour over beef and onions. Mix gently. Cover; refrigerate overnight.

  2. Drain beef and onions, reserving marinade. Discard bay leaf. Alternately thread beef, onion and zucchini on 8 long or 16 short skewers.

  3. Grill over hot coals 10 to 15 minutes or until meat is cooked to desired doneness; turn once and baste occasionally with marinade.

  4. Meanwhile, peel cucumber, leaving some skin on; seed and chop cucumber. Combine yogurt, cucumber ad cumin in small bowl; reserve.

  5. Serve kabobs with pita breads, yogurt sauce and chopped tomato.
