Cornbread Salad

Ingredients

  • 1 pkg. Mexican cornmeal mix
  • 1 pkg. Jiffy cornbread mix
  • 1 lb. bacon, fried crisp, crumbled
  • 3 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 tomatoes, chopped
  • 1 cup celery, chopped
  • 3 hardboiled eggs, chopped
  • 1 cup ranch dressing
  • 1 cup cheddar cheese, grated

Directions

  1. Bake cornbread, let cool, then crumble.

  2. Mix all the other ingredients with cornbread.

  3. Serve at room temperature or chilled.
