Baby Potatoes with Cilantro Sauce

Ingredients

  • 2 lb. baby potatoes
  • 1 cup chopped fresh cilantro
  • 1 cup fresh mint leaves
  • 1/4 cup fresh lemon juice
  • 1/4 cup roasted peanuts
  • 1 serrano chile, sliced
  • 2 tbsp plain yogurt
  • 1 tbsp chopped peeled fresh ginger
  • 3 tbsp butter

Directions

  1. In a pot, boil potatoes in heavily salted water until tender, about 20 minutes; drain. In blender, puree next 7 ingredients with 1/4 cup water; season sauce. Toss potatoes with butter; season. Serve with sauce for dipping.
