Apple Puffed Pancake

Ingredients

  • 6 eggs
  • 1-1/2 c milk
  • 1 c all-purpose flour
  • 3 T granulated sugar
  • 1 t vanilla extract
  • 1/2 t salt
  • 1/4 t cinnamon
  • 1/4 lb. butter
  • 2 apples
  • 2-3 T brown sugar

Directions

  1. Peel and thinly slice the apples.

  2. Preheat oven to 425 degrees.

  3. In blender or large bowl, mix eggs, milk, flour, granulated sugar, vanilla, salt, and cinnamon. If using a mixer, the batter will remain slightly lumpy.

  4. Place butter in a 12-inch quiche dish or 13×9 baking dish. Put in oven to melt the butter.

  5. Add apple slices to the baking dish and return to oven until butter sizzles. Do not let brown.

  6. Rmeove dish from oven and immediately pour the batter over apples. Sprinkle with brown sugar.

  7. Bake in middle rack of oven 20 minutes or until puffed and brown.

  8. Serve immediately.
