Beef and Brown- Rice Casserole

Ingredients

  • 1 lb. ground beef
  • 1 cup sliced fresh mushrooms
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 bouillon cube
  • 1/2 cup uncooked brown rice
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • Grated Parmesan cheese

Directions

  1. Brown ground beef, breaking up with fork; drain off fat. Add next 3 ingredients and saute with beef until onion is tender.

  2. Dissolve bouillon cube in 1 3/4 cups boiling water and pour into 1 1/2 quart casserole. Stir in rice, beef mixture an seasonings. Cover and bake in preheated 375 degrees oven 1 hour.

  3. Uncover and bake in preheated 375 degrees oven 1 hour. Uncover, sprinkle with cheese and bake 10 to 15 minutes longer, or until top is browned and liquid is completely absorbed.
