Venison Burgers

Ingredients

  • 1 lb. ground venison
  • 2 Tbsp. panko bread crumbs
  • 1 large egg, beaten
  • 1/2 tsp. Italian seasoning (or Cajun seasoning or BBQ rub)
  • 1/2 tsp. garlic powder
  • 1 1/2 tsp Worcestershire sauce
  • Salt and pepper
  • 1 medium onion
  • 2 Tbsp. olive oil
  • Pinch sugar
  • 6 slices thick cut bacon, fried
  • 4 slices cheddar cheese
  • 1/4 cup mayonnaise
  • 1/4 cup barbecue sauce
  • Dash of hot sauce (optional)
  • lettuce
  • sliced tomato
  • 4 buns

Directions

  1. Combine venison, panko, egg, seasonings, Worcestershire, and salt and pepper to taste. Use moistened hands to form the mixture into four patties. Cover and set aside in refrigerator.

  2. Cut onions into quarter-inch rings. Cover bottom of cast-iron skillet with olive oil. Saute onions. As they begin to soften, sprinkle with salt and sugar. Cook covered, slowly over medium heat (this can take some time.) When onions have reached desired stage of caramelization, remove from skillet and set aside.

  3. Place burger on preheated grill (indoors or outdoors) and cook for about 5 minutes on each side. Place a slice of cheese on each burger during last 2 minutes of cooking.

  4. Whisk mayonnaise, barbecue sauce and hot sauce (if desired). Spread on buns. Add burgers, top with bacon, onions, lettuce and tomato.
