Beef Burritos

Ingredients

  • 1 1/2 lb. flank steak
  • 2 jars (11 oz. each) medium salsa
  • 3 tsp. lime juice, divided
  • 3 tsp. lime zest, divided
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1 can (11 oz.) corn, drained
  • 1/4 cup + 1 Tbsp. chopped fresh cilantro, divided
  • 1/4 tsp. chili powder. optional
  • 3/4 cup sour cream

Directions

  1. Prick steak all over with fork; in plastic food storage bag, combine steak with salsa, 2 tsp. lime juice and 1 tsp. zest; refrigerate 30 minutes.

  2. Position oven rack 4 inches from heat source, preheat broiler. Remove steak from marinade, reserve marinade. Place steak on rack set in broiler pan. Broil about 5 minutes per side for medium-rare. Let stand 10 minutes before slicing.

  3. Meanwhile, reduce oven temperature to 375 degrees. Wrap tortillas in foil; heat in oven 10 minutes. In pot over medium heat combine beans, corn, 1/4 cup cilantro, chili powder, if using, reserved marinade and remaining zest and juice.

  4. Cook until heated through, about 5 minutes. Evenly divide beef among tortillas; top with sour cream and remaining cilantro.
