Beef- Cabbage Soup

Ingredients

  • 1 small head cabbage, about 1 1/2 lbs.
  • 2 Tbsp. shortening
  • 1 lb. beef stew meat, cut in 3/4 inch cubes
  • Soy sauce
  • 10 whole allspice
  • Freshly ground black pepper
  • 1/2 cup chopped parsley

Directions

  1. Cut cabbage in quarters and then in thin slices lengthwise.

  2. Heat shortening in heavy 5-quart kettle or Dutch oven. Add meat and brown well.

  3. Add cabbage, 2 quarts water, 1/4 cup soy sauce and the allspice. Bring to boil. Cover and simmer 2 hours, or until very tender. Season to taste with pepper and soy sauce. Add parsley.

  4. makes 3 quarts
