Beef Liver Braised in Wine

Ingredients

  • 1 lb. thinly sliced beef liver, cut in serving pieces
  • 1/4 cup flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 cup chopped onion
  • 3 Tbsp. butter or margarine
  • 1 can (3 or 4 lz.) sliced mushrooms, drained
  • 1 beef bouillon cube dissolved in 1/2 cup boiling water
  • 1/2 cup dry red wine
  • 1/4 tsp. basil

Directions

  1. Coat liver with mixture of flour, salt and pepper; set aside. Saute onion in butter until tender.

  2. Add liver and brown lightly on both sides. Add mushrooms, bouillon, wine and basil. Cover and simmer 15 minutes or until liver is tender.
