Beef Loaf with Frankfurters

Ingredients

  • 1 1/2 lbs. ground beef chuck
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup soft stale-bread crumbs
  • 1/4 cup minced onion
  • 1 egg, beaten
  • 1 Tbsp. prepared mustard
  • 2 Tbsp. pickle relish
  • 1 lb. all-beef frankfurters
  • Process- cheese spread at room temperature
  • sliced pimiento-stuffed olives

Directions

  1. Mix lightly but thoroughly all ingredients, except last 3 and 2/3 cup water. Divide into three equal parts.

  2. Press one part into 9 × 5 x3 inch loaf pan. Arrange 5 frankfurters lengthwise (3 in one half of pan, 2 in other half) on meat in pan. Cover with second layer of meat, then remaining frankfurters and remaining meat. Press down lightly.

  3. Bake in preheated 325 degree oven 1 hour, or until done. Remove from oven, cool, then remove from pan.

  4. Cover top with cheese spread, then press end of spatula diagonally across loaf to make a design. Garish with olive slices, then chill.
