Beef- Macaroni Casserole

Ingredients

  • 1 lb. ground beef
  • 1/2 cup milk
  • 2 eggs
  • 1/2 cup ketchup
  • 1/4 cup chopped onion
  • 1 1/2 tsp. salt
  • 1 (8 oz.) pkg. elbow macaroni, cooked
  • 2 tsp. prepared mustard
  • 1/4 cup chopped green pepper
  • 1/4 cup mayonnaise
  • 1 cup grated American cheese
  • 1/2 cup dry bread crumbs
  • 2 Tbsp. melted butter or margarine
  • 6 slices tomato

Directions

  1. Mix beef, milk, eggs, ketchup, onion and salt; set aside.

  2. Mix cooked macaroni, mustard, green pepper and mayonnaise. Spread mixture in a greased 2 quart baking dish.

  3. Spread beef mixture over top. Sprinkle with cheese and top with bread crumbs and butter.

  4. Bake at 325 degrees for 20 minutes. Place tomato slices on top and bake 10 minutes longer.
