Skillet-Braised Brussels Sprouts

Ingredients

  • 8 slices thick-cut bacon, sliced into 1/4-inch pieces
  • 2 lbs. Brussels sprouts, trimmed and halved
  • 2 garlic cloves, thinly sliced
  • 1 cup chicken stock, or more as needed
  • 2 tbsp. balsamic vinegar
  • 2 tbsp. butter
  • 1/4 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste

Directions

  1. Cook bacon in a large skillet over medium-low heat until just crisp, about 10 minutes. Transfer to a paper towel-lined plate, reserving grease in skillet.

  2. Increase heat to medium-high; add Brussels sprouts and saute until lightly browned, 2-3 minutes. Add garlic and saute until fragrant, 1-2 minutes.

  3. Pour stock over Brussels sprouts mixture. Reduce heat to medium-low and simmer, covered, 4 minutes. Remove lid and continue simmering, stirring occasionally, until liquid is evaporated and sprouts are tender, about 5 minutes.

  4. Remove from heat. Stir in bacon, vinegar, butter, salt and pepper until butter is melted.
