Lemon Pie

Ingredients

  • For crust:
  • 2 cups graham cracker crumbs
  • 1/4 cup firmly packed brown sugar
  • 3/4 cup salted butter, melted
  • For Pie Filling:
  • 1/2 cup fresh squeezed lemon juice (5-7 average sized lemons at room temp)
  • 5 large egg yolks
  • 2 cups sweetened condensed milk
  • 1 tsp freshly grated lemon zest
  • 1/2 tsp vanilla

Directions

  1. Preheat oven to 350°F

  2. Combine graham cracker crumbs, sugar and melted butter until thoroughly combined.

  3. Press firmly into a 8" or 9" pie plate.

  4. Bake for 10 minutes.

  5. Reduce oven temperature to 200 degrees

  6. In a mixing bowl, whisk yolks, lemon juice, zest, vanilla and condensed milk

  7. Pour mixture into prepared crust.

  8. Bake for 22 – 25 minutes or until pie is set.

  9. Top with whipped cream if desired. Enjoy
