Pineapple Gusher Cocktail

  • 1/2 c. dark brown sugar
  • 1 medium pineapple, peeled, cored and chopped (about 1 lb.)
  • 2 T. chopped fresh mint leaves
  • 1 lime, zested and juiced
  • 2 c. ice cubes
  • 1 c. light rum


  1. For the simple syrup, in a small saucepan combine brown sugar and 1/2 c. water. Bring to boiling; reduce heat. Cook 1 minute or until brown sugar dissolves. Remove from heat; let cool completely.

  2. In a blender, combine 1/2 c. water, plus pineapple, simple syrup, mint, lime zest, lime juice and ice cubes. Add pineapple juice; blend at high speed until smooth.

  3. Pour into chilled glasses, and serve!
