Brussels Sprouts Salad with Maple-Lemon Vinaigrette

Ingredients

  • 1 1/2 lb. Brussels sprouts, trimmed
  • 1 cup finely diced onions
  • 1/2 tsp ground ginger
  • 3 tbsp olive oil
  • 1/4 cup pure maple syrup
  • 1/4 cup fresh lemon juice
  • 1 tsp Dijon
  • 1/2 cup chopped walnuts, toasted
  • Salt and black pepper, to taste

Directions

  1. Shred Brussels sprouts in a food processor using the slicing blade.

  2. Sweat onions and ginger in oil in a saucepan, covered, over medium heat until onions soften, 11-12 minutes.

  3. Whisk in maple syrup, lemon juice and Dijon for the vinaigrette.

  4. Toss sprouts and walnuts with vinaigrette; season with salt and pepper.
