Chunky Coconut Cookies

  • 1 pkg. (17 oz.) chocolate cake mix
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 sticks (3/4 cup) unsalted butter, melted
  • 2 large eggs
  • 1 cup sweetened flake cocoanut
  • 1 cup semisweet or dark chocolate chips or chunks
  • 1/2 cup quick-cook oats


  1. Heat oven to 375 degrees. Line 2 large baking sheets with parchment paper.
  2. In a large bowl, combine first 4 ingredients plus 1/4 cup water. Beat until thick but smooth, about 2 minutes. Mix in coconut, chocolate chips and oats (batter will be stiff). Use a small cookie scoop to transfer dough to parchment-lined sheets (1 heaping Tbsp. batter per cookie). Gently flatten cookies and bake 15 to 18 minutes per batch. Cook cookies on wire racks. Store in an airtight container up to one week.
