One- Bowl Dark Chocoalte Snack Cake

Ingredients

  • 3 Tbsp. canola oil
  • 1/2 cup pureed prunes OR 1 (4 oz.) jar baby food prunes
  • 1 1/2 tsp. vanilla extract
  • 3 Tbsp. packed dark brown sugar
  • 3/4 cup granulated no-calorie sweetener
  • 1 cup plus 2 Tbsp. low-fat buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened natural cocoa powder
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. confectioners sugar, for dusting, optional

Directions

  1. Heat oven to 325 degrees. Coat an -inch square pan with nonstick baking spray.

  2. In a large bowl, whisk together the oil, prune puree, vanilla extract, brown sugar, granulated sweetener and buttermilk.

  3. Sift the flour, cocoa powder, baking powder and baking soda into the buttermilk mixture. Whisk until smooth.

  4. Pour batter into the prepared pan and smooth top. Bake 18 to 20 minutes or until the center springs back when touched and a tester inserted ner the center comes out clean. Cool.

  5. Dust cooled cake with confectioners’ sugar and cut into squares.
