Blueberry Bread

  • 1 white cake mix
  • 1/2 cup sour cream
  • 1/2 cup canola oil
  • 3 large eggs
  • 1 tsp. vanilla or almond extract
  • 1 cup water
  • 2 Tbsp. flour
  • 1 3/4 cups fresh blueberries (save 1/4 cup)
  • 2 Tbsp. butter, melted
  • 2 Tbsp. cinnamon-sugar for dusting


  1. Heat oven to 350 degrees.

  2. Beat together cake mix, sour cream, oil, eggs, extract, water and 1 Tbsp. flour until smooth. Toss the blueberries into the mix, reserving 1/4 cup.

  3. Divide mixture between two bread pans that have been prayed with cooking spray. Place the remaining blueberries on top of the loaves.

  4. Bake 40 to 45 minutes, until golden brown and a toothpick inserted in the middle comes out clean. When done, brush with melted butter and sprinkle with cinnamon-sugar. Cool before serving. Refrigerate leftovers.

  5. This bread freezes well; wrap tightly in plastic wrap and then aluminum foil, and freeze up to 1 month.
