Spinach Balls

  • 2 10 oz. pkg. frozen chopped spinach
  • 2 cups Pepperidge Farm herb stuffing mix
  • 2 medium onions, chopped fine
  • 1/2 cup Parmesan cheese, grated
  • 2 tsp. garlic salt
  • 1 tsp thyme
  • 1/2 to 3/4 cup butter, softened
  • 5 eggs, beaten


  1. Cook spinach without salt. Drain and pat dry with paper towels. Toss together; stuffing, onions, Parmesan cheese, garlic salt and thyme.

  2. Add butter and eggs, mix thoroughly. Form into walnut-size balls. Bake on cookie sheet at 350 degrees for 20 minutes.
