Beef-Noodle-Spinach Casserole

Ingredients

  • 2 pkg. (10 oz. each) frozen chopped spinach, cooked and drained
  • 1 lb. ground beef, browned
  • 1/3 cup fine dry bread crumbles
  • 1 egg, slightly beaten
  • Nutmeg
  • 2 Tbsp. Italian-style grated cheese
  • 1/2 cup finely chopped onion
  • 1/4 cup margarine
  • 1/2 cup flour
  • Salt
  • 1/4 tsp. pepper
  • 1/8 tsp. oregano leaves
  • 2 cups chicken broth
  • 2 cups milk
  • 2 egg yolks
  • 8 oz. wide egg noodles (about 4 cups)

Directions

  1. Combine first 4 ingredients, 1/4 tsp. nutmeg and the cheese; set aside.

  2. Saute onion in the margarine until golden. Stir in flour, 1 tsp. salt, the pepper, oregano and 1/8 tsp. nutmeg. Slowly add broth and milk and heat, stirring, 1 minute, or until sauce boils.

  3. Blend small amount of hot sauce into egg yolks; stir into sauce.

  4. Cook noodles in boiling salted water until tender; drain.

  5. In shallow 3 quart baking dish, alternate layers of sauce, noodles and meat mixture, ending with sauce. Sprinkle top with additional cheese, if desired.

  6. Bake in preheated 375 degree oven 25 minutes, or until sauce is bubbly.
