Ingredients

  • 15 frozen mini fillo shells (like the kind by Athens)
  • 1/3 cup light/low-fat ricotta cheese
  • 1/8 tsp. vanilla extract
  • 1 packet no-calorie sweetener (like Truvia)
  • 1 1/2 tsp. mini semi-sweet chocolate chips

Directions

  1. Preheat oven to 350 degrees.

  2. Place shells on a baking sheet, and bake until lightly browned and crispy, 3 – 5 minutes.

  3. In a medium bowl, combine ricotta cheese, vanilla extract, and sweetener. Mix well.

  4. Just before serving, fill shells with ricotta mixture and top with chocolate chips.
