Sonoma chicken Salad

Ingredients

  • Dressing
  • 1 cup mayonnaise
  • 4 teaspoons apple cider vinegar
  • 5 teaspoons hone
  • 2 teaspoons poppy seeds
  • salt and pepper to taste
  • Salad
  • 2 pounds boneless chicken breasts, from prepared roasted chicken, cooled completely
  • 3/4 cup pecan pieces, toasted
  • 2 cups red seedless grapes
  • 3 stalks celery, thinly sliced

Directions

  1. Prepare dressing by mixing together all dressing ingredients in a bowl. Refrigerate until ready to dress the salad.

  2. De-bone the cooled roasted chicken, using mostly the white meat. Refrigerate the meat for at least 30 minutes. Dice into bite-size pieces and transfer to a large bowl. Stir in pecan, grapes, celery and dressing.
