Bacon and Egg Fried Rice

Ingredients

  • 2 tbsp. vegetable oil
  • 1 beaten egg, cooked and sliced
  • 5 slices bacon, cooked and chopped
  • 2 buttered toast slices, chopped
  • 2 cups leftover rice
  • Topping:
  • Chopped fresh chives

Directions

  1. In a medium skillet, heat oil over medium. Add remaining ingredients except for topping and stir-fry until cooked and browned in spots, 3-5 minutes. Add rice and stir-fry until heated through. Drizzle or sprinkle with toppings.
