Hash Browns

Cook time: 20 minutes
Serves 2 people

Ingredients

  • 4-6 Red/New potatoes
  • 1 tsp Salt
  • 2 Tbsp peanut oil
  • 2 cloves minced garlic cloves
  • 1 medium yellow onion
  • 1/4 tsp Cayenne
  • 1/2 tsp Paprika

Directions

  1. Cut potatoes into 1/2-inch cubes.

  2. Place in pot with water, salt, and bring to a boil.

  3. Cook until just under done.

  4. Heat skillet to HOT (cast iron preferred) until oil is shimmery.

  5. Put potatoes, onions, and garlic in skillet.

  6. Stir/flip frequently.

  7. Sprinkle cayenne, paprika, salt, and freshly ground pepper over food.

  8. Cook until onions are translucent.
