Spanish-Style Roasted Potatoes

Ingredients

  • 1 lb. halved small Yukon Gold potatoes
  • 2 tbsp. olive oil
  • 1 tbsp. chopped fresh oregano
  • 2 tsp minced fresh rosemary
  • 2 tsp paprika
  • 3 tbsp. chopped, pitted Castelvetrano olives
  • 1 tbsp. olive oil
  • 1 tbsp. fresh chopped parsley
  • 1/4 tsp kosher salt

Directions

  1. Toss together potatoes, olive oil, oregano, rosemary, and paprika on a parchment paper-lined baking sheet. Bake at 400 for 25 minutes, stirring after 10 minutes. Toss with olives, olive oil, parsley, and salt.
