Grilled Cheese Variety

Ingredients

  • Prosciutto, Fig, and Blue Cheese:
  • spread: 4 tbsp. softened butter
  • Bread: 8 slices rosemary ciabatta
  • Cheese: 1/2 cup crumbled blue cheese
  • Etc: 4 slices prosciutto, 3 tbsp. fig jam
  • Italian-Style:
  • Spread: 4 tbsp. softened butter, 2 tbsp. grated Parmesan
  • Bread: 8 slices Italian bread
  • Cheese: 8 slices provolone
  • Etc: 1/2 cup chopped drained giardiniera, 1/4 cup refrigerated pesto

Directions

  1. First, choose your variety. Heat a griddle or large cast-iron skillet over medium. In a small bowl, mix the ingredients for the spread. Slather on one side of each slice of bread. Build sandwiches with the cheese, filling ingredients and bread, spread-side facing out. Cook, turning once, until the bread is toasted and the cheese is melted, about 3 minutes per side.
