beef with Black Pepper

Ingredients

  • 8 oz. beef fillet, trimmed and cut in 1-inch cubes
  • 2 Tbsp. Chinese rice wine
  • 1 Tbsp. water
  • 1/2 tsp. salt
  • 1/4 tsp. ground white pepper
  • Oil for deep frying
  • 1 Tbsp. finely chopped garlic
  • 2 tsp. coarsely crushed black peppercorns
  • 1 tsp. crushed Sichuan peppercorns or Sansho (Japanese Pepper)
  • 2 tsp. oyster sauce
  • 2 tsp. light soy sauce
  • Sliced lettuce for garnish

Directions

  1. Put beef in a bowl and sprinkle with wine water, salt, and white pepper. Massage well for about 30 seconds until all the liquid is absorbed by the beef.

  2. Heat oil and deep-fry the beef over very high heat for 30 seconds. Drain and set aside. Tip out all but 1 tsp. of oil and stir-fry for a few seconds until well mixed and serve immediately on a bed of shredded lettuce.
