Roast Pork Tenderloin with Peanut Vinaigrette

Ingredients

  • 5 tbsp. fresh lime juice
  • 1/3 cup toasted sesame oil
  • 1/4 cup light brown sugar
  • 1/4 cup fish sauce
  • 1 tbsp. grated fresh ginger
  • 2 pork tenderloins (12 oz. each)
  • 1/3 cup roasted peanuts, chopped
  • 3 tbsp. chopped fresh herbs (such as cilantro, basil, and mint)

Directions

  1. In a medium bowl, mix lime juice, oil, sugar, fish sauce, and ginger for vinaigrette. In a large bowl, marinate pork in 1/4 cup of the vinaigrette for 30 minutes. On foil-lined baking sheet, roast pork at 475, turning once, until browned and cooked through, about 25 minutes. Stir peanuts into remaining vinaigrette. Slice pork. Top with vinaigrette and herbs.
