Spinach-Artichoke Chicken

Ingredients

  • 15 oz. can artichoke hearts, drained and chopped
  • 10 oz. package frozen spinach, thawed and squeezed dry
  • 3/4 cup grated Parmesan
  • 3/4 cup mayo
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 6 chicken breasts

Directions

  1. Preheat oven to 375. Line a 15×10-inch baking pan with foil; lightly coat with cooking spray.

  2. Stir together all ingredients but chicken in a bowl. Arrange chicken in prepared pan. Cover evenly with artichoke mixture.

  3. Bake until chicken is no longer pink and cooked through, 35-40 minutes.
