Savory Coconut Rice

Ingredients

  • 1 1/2 cups jasmine rice
  • 1 1/4 tsp kosher salt
  • 1 tsp finely grated fresh ginger
  • 1/2 tsp crushed red pepper
  • 1/4 tsp ground turmeric
  • 1 can light coconut milk
  • 1 cup water
  • 1 bay leaf
  • 1/4 cup toasted coconut

Directions

  1. Put rice, salt, ginger, red pepper, and turmeric in a heavy-bottom saucepan. Stir in coconut milk and water until just combined. Bring to a boil over medium-high heat. Add bay leaf, cover pan, and reduce heat to low; simmer 12 minutes. Remove from heat and let stand, covered, 5 minutes. Remove from heat and let stand, covered, 5 minutes. Fluff with a fork. Top with coconut, if using.
