Chef John’s Chimichurri Sauce

Ingredients

  • 1/2 cup olive oil
  • 4 garlic cloves, chopped
  • 3 tbsp. white wine vinegar
  • 1/2 tsp salt
  • 1/4 tsp ground cumin
  • 1/4 tsp crushed red pepper
  • 1/4 tsp black pepper
  • 1 cup packed flat-leaf Italian parsley
  • 1/2 cup fresh cilantro
  • 1/4 cup fresh oregano

Directions

  1. Put all ingredients in a food processor. Pulse 2-3 times, then scrape down sides with a rubber spatula; repeat until a thick sauce forms, about 12 times.
