Garlic-Kale Quinoa

Ingredients

  • 1 tbsp. olive oil
  • 2 cups packed chopped kale
  • 3 garlic cloves, minced
  • 1 1/2 cups water
  • 2/3 cup uncooked quinoa, rinsed
  • 1/2 tsp salt
  • 1/2 tsp sesame oil
  • 1/4 tsp black pepper

Directions

  1. Heat oil in a saucepan over medium heat. Add kale and garlic; cook, stirring, until kale is wilted and garlic is fragrant, about 2 minutes. Stir in remaining ingredients. Reduce heat to medium-low and simmer, covered, until water has been absorbed, 15-20 minutes.
