Chicken and Pineapple Tostadas

Ingredients

  • 1 lb. chicken cutlets
  • 1 tbsp olive oil
  • Juice of 1 lime
  • 1 garlic clove, grated
  • 1 tsp chili powder
  • 3/4 tsp kosher salt
  • 1/3 cup salsa verde
  • 1 pineapple ring
  • 6 tostadas
  • Mexican crema, shredded lettuce and sliced red onion, for serving

Directions

  1. Toss chicken with oil, lime juice, garlic, chili powder and kosher salt.

  2. Grill the chicken over medium-high heat, about 3 minutes per side; chop and toss with salsa verde. Grill pineapple until charred, 2 minutes per side; chop.

  3. Divide among tostadas. Top toppings.
