Chorizo and Egg Tostadas

Ingredients

  • 1 tbsp olive oil
  • 12 oz. fresh chorizo
  • 1 poblano, sliced
  • 1 red bell pepper, sliced
  • 2 scallions, sliced
  • Salt and pepper
  • 1/4 cup salsa
  • 1/4 cup water
  • 6 tostadas
  • Fried eggs and more sliced scallions, for serving

Directions

  1. Heat 1 tbsp oil in a large skillet over medium-high heat. Add chorizo; cook, stirring, until browned, about 5 minutes. Push to one side of the skillet.

  2. Add another tbsp olive oil, poblano, red bell pepper and scallions to the skillet; season with salt and pepper. Cook until tender, 5 minutes. Add 1/4 cup each salsa and water; stir everything together.

  3. Divide the chorizo mixture among tostadas; top each with a fried egg and more sliced scallions.
