Lemon Bars

Ingredients

  • Crust:
  • 2 sticks salted butter, cut into small cubes, plus more for the pan
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • Filling:
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • Grated zest and juice of 4 lemons
  • Powdered sugar, for topping

Directions

  1. For the crust: Preheat the oven to 350. Grease a 9×13-inch pan with butter. Stir together the flour, granulated sugar, and salt in a bowl. Add the butter and use a pastry cutter to cut it all together until the mixture resembles fine crumbs. Press evenly into the bottom of the prepared pan. Bake until golden, 25-30 minutes. Transfer to a rack to cool.

  2. For the filling: Stir the granulated sugar with the flour in a medium bowl. Crack in the eggs and whisk to combine. Mix in the lemon zest and juice. Pour the filling onto the crust and bake until just set, about 25 minutes.

  3. Let the bars cool slightly, then refrigerate until completely cooled and set, at least 2 hours. Cut into pieces and sift powdered sugar over the top.
