Cap’n Crunch Chicken Strips

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp kosher salt, plus more for sprinkling
  • 1/2 tsp black pepper
  • 2 eggs
  • 2 cups Cap'n Crunch cereal
  • 12 chicken tenders or strips
  • Vegetable oil, for frying
  • Ketchup, for serving

Directions

  1. In a pie plate or shallow dish, mix the flour, salt and pepper. In another bowl, lightly whisk the eggs. Finally, pour the cereal into a third dish and crush it until you have fine crumbs plus some large chunks.

  2. Dip the chicken first in the flour, then in the egg, then in the cereal. Keep going until all the chicken is breaded.

  3. In a large skillet, heat 1/4 inch of vegetable oil over medium heat. Add half the chicken strips and cook them until they’re golden brown and cooked through, about 3 minutes per side. Watch them so they don’t burn!

  4. Drain them on paper towels and sprinkle with salt. Finish cooking the rest of the chicken. Serve with ketchup.
