Pretzel-Coated Fried Goat Cheese

Ingredients

  • 2 cups mini pretzels
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • Two 4-oz. logs goat cheese
  • Olive oil, for frying
  • Marinara sauce, warmed, for serving
  • Minced parsley, for garnish

Directions

  1. The pretzels are the coating. Place them in a food processor and grind them to a very fine crumb. Place the pretzel crumbs in a bowl. In a separate bowl, lightly whisk the eggs with 2 tbsp water. Place the flour in a third bowl.

  2. Unwrap the goat cheese logs and slice each log into quarters for a total of 8 goat cheese slices. Grab one slice and dredge it in the flour, shaking off the excess, then dip it in the egg wash, turning it a couple of times to make sure it coats the flour. Finally, drop it in the pretzel crumbs and turn it over to coat thoroughly. Repeat with the rest of the slices.

  3. In a skillet, heat 1/2 inch of olive oil over medium heat. Gently lay in 4 of the goat cheese slices and fry them for about 45 seconds. Turn them over with a slotted spoon and fry the other side until golden and crisp, 30-45 seconds.

  4. Remove them to paper towels to drain. Repeat with the remaining 4 slices. Serve with marinara sauce and a sprinkling of parsley.
