John Wayne Tacos

  • 1 1/2 lb. skirt steak
  • 2/3 cup soy sauce
  • 6 tbsp. Mirin
  • 6 tbsp. brown sugar
  • 2 tbsp. sesame oil
  • 4 garlic cloves, minced
  • 4 green onions, finely chopped
  • 2 tsp grated fresh ginger
  • 12 corn tortillas
  • 12 lettuce leaves (Bibb)


  1. Place the steak in a large Ziploc bag. Combine the soy sauce, Mirin, brown sugar, sesame oil, garlic, green onions and ginger in a mixing bowl. Whisk to combine. Pour the marinade over the meat and let sit at room temp for 30 minutes.

  2. Heat a grill to medium-high.

  3. Pat the steak dry with paper towels and grill 2 minutes per side. Let rest for 10 minutes then slice thinly.

  4. Grill the tortillas 30-60 seconds per side. Keep warm.

  5. To serve, place a lettuce leaf on top of a tortilla and top with some sliced meat.
