Chicken Tortilla Soup

Ingredients

  • 1 onion chopped
  • 3 cloves garlic, minced
  • 1 T olive oil
  • 2 t chili powder
  • 1 t dried oregano
  • 1 28 oz can crushed tomatoes
  • 1 10.5 oz can condensed chicken broth
  • 1 1/4 C water
  • 1 can whole kernel corn
  • 1 4oz can chopped green chili peppers
  • 1 15oz can black beans drained
  • 1/4 C chopped, fresh cilantro
  • 2 boneless chicken breast halves cooked and cut into bite size pieces
  • crushed tortilla chips
  • sliced avocado
  • shredded Monterey jack cheese
  • chopped green onions

Directions

  1. In a medium stockpot heat oil over medium heat

  2. Saute onion and garlic in oil until soft

  3. Stir in chili powder, oregano, tomatoes, broth and water

  4. Bring to a boil and simmer for 5 to 10 minutes

  5. Stir in corn, chiles, beans, cilantro and chicken

  6. Simmer for 10 minutes

  7. Top soup with crushed tortilla chips, sliced

  8. avacados, cheese and onion
