Pineapple Pizza

Ingredients

  • Flour, for rolling dough
  • 1 lb. ball of pizza dough
  • 1 pineapple--peeled, cored and sliced into 1/4-inch thick rounds
  • 8 oz. mascarpone cheese, at room temp
  • 2 tbsp confectioners' sugar
  • 1 tsp pure vanilla extract
  • 2 tbsp honey
  • Fresh mint

Directions

  1. On floured surface, stretch dough into 6×9-inch rectangle. Grill over medium heat, turning once, until grill marks form, about 10 minutes. Grill pineapple, turning once, until grill marks form, about 6 minutes. Cut pineapple slices in half. In small bowl, stir mascarpone, sugar, and vanilla; spread over pizza. Top with pineapple, honey, and mint.
